Our fresh fillets are pin-boned and filleted by hand. Being a particularly athletic fish, the fillets are lean and firm-textured (no fattiness here), with a lovely delicacy and sweet depth of taste. They are an oily fish high in Omega 3, essential for a healthy heart and immune system.

Our three-generation family smoking team hand-fillet and pin-bone the trout, then hand-cure with a dry salt rub, before smoking over retired oak whisky barrels. There is no brining or additives: the natural sweetness and quality of the Steelhead speaks for itself. The taste is delicate, but with a depth of flavour. All our smoked products are sliced and interleaved.
