Steelhead Trout (Oncorhynchus mykiss) is the rainbow that migrates to the sea. Like all rainbow trout, it’s native to the Pacific coastline of North America, but is now found all over the world. It thrives in our Scottish sea lochs, where we’ve farmed it for nearly 50 years.
In the sea, the Steelhead grows far bigger, leaner and more athletic than a river trout, akin to a salmon, but with a sweet, delicate flavour and outstanding firm texture. We are passionate about trout, and only farm the Steelhead at Kames, because it’s exceptional.

An Award-Winning Product
We launched our own product range in 2020 with the aim of building awareness for Scottish Steelhead and offering our customers options of fillets and smoked fish alongside head on, gutted.
Our products were immediately shortlisted for the Great British Food Awards 2021, and the fresh fillets picked up a Highly Commended.
Since then, our cold smoked & our hot smoked trout won two stars and one star respectively at the Great Taste Awards 2022.
Quality Control
Kames is unique in integrating our own genetics and breeding programme into the company. As of 2022, all our fish are from our own Kames brood stock, meaning we can control quality and welfare from egg to plate, hugely increase survival and adapt for a climate-challenged future.
